this weekend....

was kinda bananas. lets start with friday:

i met christian at phannys house and we went to the freshjive party at reserve. it was a good time...open bar, an art exhibit with amazing photos, and good music. after we went to roscoes chicken and waffles. thats right ladies and gentlemen i put my healthy eating aside and got a #13 with mac n cheese. do i regret it you ask? HELL NAH TRICK! that food was sooooo good! some guy was roaming taking pictures but it is a mystery where those are!


saturday:


woke up made some vegan pancakes and hash browns, hung around all day while christian worked on a look book with kyle. for dinner i made some portobello mushroom burgers with beans, and a greek salad with heirloom tomatos. YUM! oh and grilled zucchini! it was a good dinner! after this i went to candlelight with laura and jason. we sat at a table the whole time but me and laura definitely got drunk. i drank alot for me i was kinda proud of myself hahaha. after this jason dropped me off at ejs and we hung out, i finally met winston and harlow (ejs 2 boston terriers). winston hated me at first but then by the end of the night he was laying with me, it was the cutest thing. and harlow was the biggest sweetheart! annnyyywayy. ej showed us his dvd collection of 80s music videos as we sat in the dark. he said it was because when you watch movies in school they turn off the lights so youll pay attention and that its official so he tried to do the same thing. hilarious. we definitely didnt get home till 4. that was a good time. oh and i was on the floor for about 50% of the time i was at ejs. not laughing......just hanging out. it was a good place.....im kinda notorious for floor sitting when im drunk if u didnt know. u should try it one time...it just feels right.













sunday: woke up hung out, went to my grandparents then came to nick vics for a pool party. i definitely had a drink that consisted of vodka coke and tequila. it took me 2 hours to drink it because every time i held it up to my nose it wreaked of tequila. why did you have this drink you ask? well one time at kyles we took a shot of jose cuervo and it wasnt that bad. so im like hey liz lets take a shot of jose cuervo. that shit was SIIIIIIIICK. so i only took half and i didnt want to waste so i just poured it into my drink. (coke and vodka....also a bad combo) well that was fun. hahaha. everyone spun and we hung out by the pool. we left then went home theeend.

monday we woke up too late and christian got fnished with work too late so we ate at candlelight for about 5 hours then just went home and walked the dogs and i made bombie minestrone soup. heres the recipe....i didnt follow it too closely cause i had to use what we had at home and it was definitely not all of that. its from veganyumyum.com this woman is a genious.

Minestrone Soup
Serves 4
Olive Oil
1 Sweet Yellow Onion, diced
1-4 Clove(s) Garlic, minced
1 Can Stewed or Fire Roasted Tomatoes (15 oz), blended
1 Large Carrot, diced
6 Cups of Hot Water or Veg Stock
1 Tbs Tomato Paste
1 Bay Leaf
1/4-1/2 tsp Celery Salt
2/3 Cup Elbow Macaroni
2 Cups Kale, packed
Salt to Taste (I used 1 1/2 tsp)
1/2 Cup Frozen peas
2 Tbs Fresh Herbs (I used marjoram and rosemary, 1 Tbs total after chopping)
Lemon Zest
Black Pepper

Add a few tablespoons of olive oil in the bottom of a soup pot that has a lid. Heat oil and add onions. Cook over medium heat, stirring occasionally, for 10 minutes. In the last minute of cooking, add the garlic.
Tip for mincing garlic: After removing the skin (smash it lightly with the flat side of your knife to do that), chop the garlic with a pinch of salt. The salt acts as a tenderizer and the friction of the granules break down the clove to help you achieve a fine mince.

Add the tomatos to the onions and garlic and simmer for another 4-5 minutes. Add the carrot and the water/broth and bring to a boil. Add the tomato paste, bay leaf, and celery salt cook until the carrots begin to soften. Then add macaroni and stir often, making sure it doesn’t stick to the bottom of the pan. Add kale.
Add salt to taste. I used water, and therefore added 1 1/2 tsp of salt. If you used vegetable broth or bullion, you may not need this much salt. Simmer, covered, until the pasta is cooked. Add the peas at the end, they’ll defrost in a matter of seconds. Turn off heat, add fresh herbs.
Ladle soup into bowls and grate some lemon zest over the top of each serving. Sprinkle pepper over the top.
